Parmesan & Almond Coated Chicken Nuggets



Thankfully my children will eat food that is not "kid" friendly, however sometimes we have friends over for play dates and I need to make something most kids like. Enter chicken nuggets! Who can resist these delicious little bites? These are grain free since they are made with almond flour, they do have dairy but that can easily be omitted.


Parmesan & Almond Coated Chicken Nuggets:

  • One Package Ground Chicken (mine was 1.25 lbs)
  • 1/3 Cup Almond Meal
  • 1/3 Cup Parmesan Cheese
  • 1 Egg
  • 1 Small Carrot
  • Salt and Pepper to Taste

Method:

Mix almond meal and Parmesan cheese in a bowl, salt and pepper to taste. Set aside.



Place ground chicken in a bowl. Grate Carrot into the chicken.



Add the egg and salt and pepper to taste.



Stir together until well incorporated.




Use a spoon or small scooper (like shown above) to keep nuggets similar in size. Shape in hands.


Place nugget into the mixture of parmesan and almond meal. Roll around until well coated.




Remove nugget from mixture and place on a silpat or parchment paper (do not skip this step or you will have parmesan cheese on your cookie tray that may be hard to remove).


Place in a 350 degree oven for about 30 minutes. Let cool slightly before serving.



These can be done a variety or ways. You can make the coating with just almond flour, you could also substitute pretty much any vegetable for the carrots. I just happened to have some carrots I needed to use up. I have used zucchini before and that turned out well also. I hope your children enjoy these treats!

  1. Great idea! My kids would live on store bought chicken nuggets alone if we let them. ;) I'll give these a try and see if they receive a tick of approval.
